I bought a bag of "Darn Good Chili" plus a 7oz pack of shredded beef at the supermarket. It's found in the soup aisle, yellow package, forgot the brand name. Stuff was delicious and weighed very little to pack. Definitely going to be a staple on backpack trips from now on. The hot and sour soup is excellent as well.

I've tried Mountain House meals on overnight trips and find them too spicy for my stomach - a little too much paprika. If anyone has other less-spicy brands to suggest, I'd like to hear about them.
